Press tofu between paper towels to remove excess moisture, cut into cubes
Heat sesame oil in wok or large skillet over high heat
Stir-fry tofu cubes until golden on all sides, remove and set aside
Add minced garlic and ginger, cook for 30 seconds
Add vegetables and stir-fry for 5-7 minutes until tender-crisp
Return tofu to pan, add soy sauce and mix well
Serve over cauliflower rice
